VALENTINE'S DAY BY THE WATER

Clam Linguine
340g linguine
3 tbsp butter
4 garlic cloves
Red pepper flakes
2 tbsp chopped parsley
450g fresh littleneck clams
½ cup dry white wine
3 lemons (1 lemon juice), 2 wedges for serving
Step 1. Cook pasta until al dente and drain
Step 2. Medium heat on deep pan with butter, garlic, crushed red pepper flakes and parsley. Cook for 1 min for fragrance.
Step 3. Add clams and put over wine. Cover with lid and cook until clam shells open (approx. 7-10mins) – discard any unopened clams
Step 4. Add lemon juice, cooked linguine and toss until mixed well.
Molten Chocolate Cakes
8 tbsp unsalted butter
Cocoa power for dusting
2 2/3 cups semisweet chocolate chips melted
½ cup granulated sugar
6 large eggs
2/3 cups flour
1tsp vanilla
2tsp espresso powder
½ tsp salt
Icing sugar for dusting
Step 1. Preheat oven to 200’C. Generously butter 12 cups of standard muffin tin. Dust with cocoa powder
Step 2. In a large bowl, cream the butter and granulated sugar until fluffy with a hand mixer. Add eggs one at a time, beating well after each addition. Gradually beat in flour and salt and stir in chocolate.
Step 3. Pour batter evenly among the prepared muffin cups. Bake for 8-9 minutes. Remove from oven and let stand for 5 minutes. Tip: place a large baking sheet on top of the muffin tin and flip over to get cakes out. Place on serving plats, dust with icing sugar and serve.
